Apricot Punch, experimental and delicious, pirouettes on the palate, with hints of apricot jam, a pop of bubblegum, and fragrant white rose.
At this Pereira farm in Risaralda, ripe coffee cherries are carefully harvested and immersed in water tanks for cleansing. Skilled hands then extract coffee seeds from the cherries, which are placed in special tanks containing specific yeast strains for fermentation. Over the next 48 hours, the fermentation imparts complexity and character to the coffee. Post the fermentation, the beans are washed to remove unwanted elements, and dried meticulously under controlled ambient conditions.
This remarkably precise processing is the brainchild of Andres, who manages a cherished family-owned coffee business in Pereira, Risaralda. Situated in Colombia’s Coffee Triangle, Risaralda's fertile soil, favourable climate, and high altitudes make it an ideal hub for specialty coffee production.
