After picking the ripest drupes and hand selecting them this Pink Bourbon variety
passed through a fermentation stage in an anaerobic environment in drupe, then pulped and again a stage of fermentation in sealed barrels inoculating lactic bacteria from a previews Geisha fermentation.
14 days parabolic sun dryer, then it was stabilized during 3 months in a temperature controlled room.
